Golden Door Potassium Broth

This warm, reviving beverage is a great favorite with the guests of the Golden Door. Potassium, available in fruits and vegetables, is an important mineral that needs to be replenished after energetic workouts when much is lost (as much as 500 to 600 mg after two to three hours of strenuous exercise). The Golden Door Potassium Broth boosts the blood sugar level and replaces potassium and sodium lost through perspiration.

Ingredients

  • 46 oz. tomato-based vegetable juice (low sodium)
  • 2 cups of water
  • 3 cups vegetable trimmings (such as celery tops, mushrooms, zucchini, onion, bell pepper, parsley stems, lettuce, carrots)
  • 1 tsp chili flakes (optional)
  • 1 tsp dried basil or 1 tbsp chopped fresh basil


Directions

In a small soup pot, combine tomato-based vegetable juice, water, vegetable trimmings, chili pepper flakes, and basil to boil. Reduce heat and simmer about 40 minutes. Strain, pressing to extract liquid, and discard solids.  Serve broth hot or cold.

Makes approximately twelve 4-ounce servings.  Recipe can easily be halved.
